Ovid’s gravity-flow winery is nestled into the hillside overlooking Oakville and the surrounding vineyards. When the grapes are brought from our nearby vineyard, they are carefully sorted both before and after destemming so that only uniformly perfect fruit goes into our wine. Our winery was designed to correspond to each of our one-acre vineyard blocks. On a trip to Bordeaux for inspiration and ideas, we were intrigued by the concrete fermenters,
which have been used by some of the great Chateaux. Inspired by their success and enthusiasm, we built small concrete fermenters at Ovid. French masons worked to ensure that the interior surface of the tanks was optimal. We also use wood fermentation tanks sized and built specifically for our vineyard blocks. We cherish the added complexity that the two types of fermentation bring to our wines. After fermentation, the wines age in barrels in our underground caves for about 18 months in French oak cooperage from several different producers. Our winery is solar-powered and  Green certified.
